I’m a big fan of oatmeal for breakfast in the winter (see
Oatmeal Bar), so when I found this recipe online at
cookingwithjax.com, I HAD to try it. Who wouldn’t love apple pie for breakfast?! The original recipe had no sweetener in it – you could add sweetener to each individual bowl per individual taste. I altered it a little bit so I would end up with more and have it pre-sweetened (less work for me in the morning).
It was Yummmmmmmy and my kids agreed! It was super easy…I just dumped it all into my crockpot before bed, set the timer, and it was ready for me in the morning!
Oh, and if you don’t have a timer on your crockpot – don’t despair. I don’t either – I picked up one of those really cheap outlet timer things that people use for Christmas lights or turning lights on and off when they’re out of town and used that – worked like a charm (cost about 5 bucks).
My homemade crockpot timer
Here’s what you need:
2 cups steelcut oats (also known as Irish oats or pinhead oats – don’t use regular oats or you’ll wind up with a bunch of mush)
Steelcut oats - look kind of like a cross between oats and barley
2 cups apple juice
6-7 cups water
6 apples – peeled, cored, and diced
½ cup chopped walnuts
½ cup sugar
½ cup brown sugar
1 teaspoon cinnamon
Here’s what you do:
1. Dump it all into your crockpot.
2. Set the timer to start about 7 hours before you want to eat it.
3. Turn crockpot temperature to low.
4. Go to bed.
5. If you happen to wake up during the night and want to stir it – have fun. Otherwise, it’ll be fine.
6. Wake up to a homemade hot breakfast!!
